My go-to, feel better, Eat Some Produce Soup is just the thing to warm you up and use up all that produce in the fridge!

INT. 2010 – LIBBY’S APARTMENT, KITCHEN – EVENING
LIBBY stands in front of her open refrigerator. Beside her is APARTMENT MANAGER BECKY. They peer into the fridge. Steam wafts out.
POV LIBBY’S REFRIGERATOR – CONTINUOUS
APARTMENT MANAGER BECKY
I’m pretty sure refrigerators aren’t supposed to be hot inside.
LIBBY
(stuffily)
It’s surreal.
APARTMENT MANAGER BECKY
You have a lot of produce.
LIBBY
I’m a vegan.
Libby coughs, miserably. Apartment Manager Becky looks at her.
APARTMENT MANAGER BECKY
You’re sick?
Libby looks at Apartment Manager Becky. She coughs, miserably. Apartment Manager Becky looks back at the fridge.
APARTMENT MANAGER BECKY
I’ll put in a maintenance request
LIBBY
Thanks.
APARTMENT MANAGER BECKY
You should take some cough medicine.
LIBBY
Thanks.
APARTMENT MANAGER BECKY
And eat some produce.
Libby coughs, miserably. Apartment Manager Becky closes the door and exits.
INT. LIBBY’S APARTMENT, KITCHEN – LATER
Libby takes a swig of cough medicine. She coughs, miserably. Her eyes are glazed. She stares at the fridge.
Suddenly the refrigerator door explodes open in a burst of steam! Dance music plays! The semi-wilted produce comes to life! It dances together until it resembles Apartment Manager Becky’s face. Libby watches in amazement as the produce face says–
PRODUCE APARTMENT MANAGER BECKY
Eat some produce!
The face bursts apart into a produce party! Lights flash! Bass thumps! The veggies dance out of the fridge.
SERIES OF SHOTS
- BOK CHOY tosses a pot onto the stove.
- SCALLIONS balance a knife onto the edge like a diving board.
- MUSHROOMS line up to dive and slice themselves into the pot.
- GARLIC does a strip tease.
- ONION slivers into fans and twirls into the boiling pot.
- GINGER ROOT bumps and grinds against a microplane. The gratings float into the pot like confetti.
- BASIL chiffonades.
- TOFU CUBES do gymnastic flips.
- PEA SHOOTS whirl into the bubbles.
- SPINACH spirals and flutters into the broth.
END SERIES OF SHOTS
The music ends. Flashing lights fade. All that remains is the bubbling pot on the stove.
Libby hesitantly approaches the pot. She peers over the edge. It smells Delicious!
INT. LIBBY’S DINING ROOM – LATER
Libby sits, steaming bowl of soup in her hands.
Suddenly SAMURAI LIME hops onto the edge of the bowl. It splits itself and screams–
A battle cry as it squeezes its juice into the bowl. Satisfied, it tumbles away.
Libby holds the bowl under her nose and inhales. She coughs, then smiles.
FADE OUT
Ingredients
- 4 ginger tea bags
- 8 cups water or broth
- 6 cloves of garlic, minced
- 1 cup crimini mushrooms, sliced
- 1 cup shiitake mushrooms, sliced
- 1/2 jalapeño, seeded and diced
- 1 tablespoon grated ginger
- 1 small onion, sliced
- 12 ounce package firm tofu, cubed
- 4 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons apple cider vinegar
- 1 tablespoon agave or honey
- black pepper, to taste
- 1 bunch scallions, chopped
- 2 large heads of boy chow, chopped
- a large handful of pea shoots, chopped
- a large handful of spinach or any other greens on hand
- 1/4 basil, chiffonaded
- 1 tablespoon toasted sesame oil
- 2 tablespoons white miso
- lime wedges, optional
- micro-greens, optional
- red pepper flakes or chili sauce, optional
Instructions
- Boil 8 cups of water and add teabags. Steep for 5 minutes, remove bags and add garlic, mushrooms, jalapeños, ginger, onion and tofu.
- Simmer on medium high for 20 minutes. Turn heat down to medium and add soy sauce, both vinegars, agave or honey, scallions, bok choy and other greens, including basil.
- Return to low simmer, then add sesame oil, miso and stir until combined.
- Pour into serving bowls. garnish with micro greens, chili flakes or sauce and lime wedges.
- Feel instantly better
